Traditional v/s vegan apple cake

 

INGREDIENTS for the vegan version:_MG_9894-con-titolo-piccola

 

210 g flour

150 g granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

A lot of cinnamon

130 ml sunflower oil

170 ml water

good quality vanilla extract

1 tablespoon apple cider vinegar

3 apples peeled cored and sliced

 

Preheat the oven to 180° Celsius/350° F .

Line a 9 inch-22 cm round pan with parchment paper.

In large bowl sift togheter  flour, sugar, baking soda, cinnamon, and salt. In a separed container mix up oil, water, vanilla, and vinegar, then add the compound to the dry ingredients and beat until just combined. Do not overmix!

Arrange the slices in the cake pan, try to put them in a graceful circular pattern :-)

Spread the batter all over the apples.

Than carefully  fold in the rest of the pieces into the batter.

Bake for 40 to 45 minutes, or until golden brown.

Let it cool and the gently unmold the cake, then turn it and remove the paper. You’ll have te circular design on top :-)

Remember to dust with powdered sugar just before serving it, because this humid cakes tends to “eat it”:-)

 

INGREDIENTS for the traditional version:

( I would like to stress that the traditional version is vegetarian, and this is valid fot tha majority of the cake’s recipes :-) vegetarians eat sweet, decadent treats too!! )

1 egg

220 g granulated sugar

75 ml sunflower oil

45 ml apple juice

110 g flour

1 tsp full of baking powder

1 pinch of salt

35/40 g brown sugar

Good quality vanilla extract

3 small apples peeled cored and sliced

1 tsp ( or more, or less :-) ) cinnamon

ginger and nut meg if you like it

 

Preheat the oven to 180° Celsius/350° F .

Lightly grease a 8-inch/20 cm round pan and line with parchment paper.

Beat the egg and sugar until light, then add oil, vanilla and apple juice and beat .

In a separate bowl sift toghether flour, salt and baking powder, then add them to the batter and beat until combined, don’t worry if it will look a bit thick but if it’s really too much just add A BIT of juice.

In a cup mix toghether sugar and spices

Arrange the slices in the greased metal cake pan, try to put them in a graceful circular pattern then sprinkle them with the mix.

Then spread the batter all over the apples.

Than carefully  fold in the rest of the pieces into the batter and sprinkle with remaining brown sugar mixture.

Bake in the centre at 180° C for about 40 min, be careful not to burn the sugar on top, eventually cover the pan with a parchment paper foil.

Let it cool and the gently unmold the cake, then turn it and remove the paper. You’ll have te circular design on top :-)
